Steps
In a skillet, brown the ground beef until fully cooked.
In a separate pan, heat the coconut milk over medium heat and stir in the red curry paste until well combined.
Add the cooked ground beef to the curry mixture and let it simmer for 5 minutes.
Prepare the toppings by slicing the cherry tomatoes, avocado, and red onion. Chop the coriander and set aside.
Warm the tortilla wraps on a dry skillet or in the microwave.
Spread a layer of the beef curry mixture onto each tortilla wrap.
Sprinkle mozzarella cheese, basil leaves, and a squeeze of lime juice on top of the curry mixture.
Add the sliced cherry tomatoes, avocado, and red onion as desired.
Garnish with chopped coriander and drizzle with olive oil.
Season with salt and black pepper to taste.
Roll up the tortilla wraps tightly and serve immediately.
