Steps
Preheat the oven to 180°C (350°F).
In a bowl, combine the gyro meat with lemon juice, oregano, minced garlic, salt, and pepper. Mix well.
Shape the meat mixture into small patties and arrange them on a baking sheet.
Bake in the preheated oven for 20-25 minutes or until cooked through.
While the gyro meat is baking, prepare the toppings.
Chop the tomatoes, red onion, lettuce, cucumber, and black olives.
In a small bowl, crumble the feta cheese.
Warm the pita bread in the oven or on a stovetop griddle.
Once the gyro meat is cooked, assemble the taco gyros by spreading a spoonful of tzatziki sauce on each warmed pita bread.
Place a couple of gyro meat patties on top of the sauce.
Add the chopped tomatoes, red onion, lettuce, cucumber, black olives, pickled jalapenos, and crumbled feta cheese.
Drizzle with a bit more tzatziki sauce, fold the pita bread in half, and enjoy!
