Spiralized Zucchini Noodle Pad Thai

Steps


  • Make the sauce by whisking together sesame oil, soy sauce, honey, sriracha sauce, and minced garlic.

  • Spiralize the zucchini into noodle-like strands.

  • Chop the carrots, red bell pepper, green onions, and tofu into small pieces.

  • In a large pan, heat some oil and sauté the vegetables and tofu until slightly tender.

  • Add the zucchini noodles and bean sprouts to the pan and cook for another 2-3 minutes.

  • Pour the sauce over the noodles and vegetables, tossing to coat everything evenly.

  • Garnish with chopped peanuts, fresh cilantro, and a squeeze of lime juice.

  • Serve immediately and enjoy!
