Cauliflower Power Bowl

Steps


  • Preheat the oven to 400°F (200°C).

  • Toss the cauliflower florets with 1 tbsp olive oil, salt, and black pepper. Roast in the oven for 25-30 minutes until golden brown.

  • In a small bowl, whisk together tahini, fresh lemon juice, minced garlic, 1 tbsp olive oil, salt, and black pepper to make the dressing.

  • Thinly slice the carrots, red bell pepper, yellow bell pepper, and purple cabbage.

  • In a large bowl, combine the roasted cauliflower, sliced vegetables, cooked quinoa, and avocado.

  • Drizzle the tahini dressing over the bowl and gently toss to coat all the ingredients.

  • Garnish with toasted sesame seeds and fresh cilantro.

  • Serve the Cauliflower Power Bowl and enjoy!
