Cauliflower Power Bowl

Steps
Preheat the oven to 400°F (200°C).
Toss the cauliflower florets with 1 tbsp olive oil, salt, and black pepper. Roast in the oven for 25-30 minutes until golden brown.
In a small bowl, whisk together tahini, fresh lemon juice, minced garlic, 1 tbsp olive oil, salt, and black pepper to make the dressing.
Thinly slice the carrots, red bell pepper, yellow bell pepper, and purple cabbage.
In a large bowl, combine the roasted cauliflower, sliced vegetables, cooked quinoa, and avocado.
Drizzle the tahini dressing over the bowl and gently toss to coat all the ingredients.
Garnish with toasted sesame seeds and fresh cilantro.
