Superfood Salad with Citrus Dressing

Steps


  • Cook quinoa according to package instructions and set aside to cool.

  • In a large mixing bowl, massage the kale leaves with olive oil for a few minutes to tenderize them.

  • Peel and segment the orange, then squeeze the remaining juice into a small bowl.

  • In a separate small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper to make the citrus dressing.

  • Add the cooled quinoa, avocado, orange segments, pomegranate seeds, sliced carrots, cherry tomatoes, thinly sliced red onion, sunflower seeds, crumbled feta cheese, and fresh mint leaves to the bowl of kale.

  • Drizzle the citrus dressing over the salad and toss gently to combine.

  • Serve immediately and enjoy!
