Mexican-inspired Sushi Burritos

Steps
Prepare sushi rice according to package instructions.
Slice avocado, red bell pepper, carrots, and cucumber into thin strips.
Slice sushi-grade raw tuna into thin strips.
In a small bowl, mix lime juice, soy sauce, and sriracha sauce to make a spicy mayo.
Lay a piece of nori seaweed on a bamboo sushi mat.
Spread a layer of sushi rice on the nori, leaving a small border at the top.
Arrange the avocado, red bell pepper, carrots, cucumber, and sushi-grade raw tuna on top of the rice.
Drizzle the spicy mayo over the filling.
Roll the sushi burrito tightly using the bamboo mat.
Slice the sushi burrito into bite-sized pieces.
Sprinkle sesame seeds and fresh cilantro on top.
Serve the Mexican-inspired sushi burritos with additional soy sauce and spicy mayo for dipping.
