Mexican Street Corn Pizza

Ingredients


  • pizza dough

    1 ball

  • corn kernels

    1 cup

  • cotija cheese

    1/2 cup

  • mayonnaise

    1/4 cup

  • lime juice

    1 tablespoon

  • chili powder

    1 teaspoon

  • garlic powder

    1/2 teaspoon

  • red onion

    1/4 cup, thinly sliced

  • fresh cilantro

    2 tablespoons, chopped

  • jalapeno

    1, sliced

  • olive oil

    1 tablespoon

  • salt

    to taste

  • pepper

    to taste




Steps


  • Preheat oven to 450°F (230°C) and lightly grease a baking sheet.

  • In a bowl, combine the corn kernels, mayonnaise, lime juice, chili powder, and garlic powder. Stir until well combined.

  • Roll out the pizza dough on a floured surface to your desired thickness.

  • Transfer the rolled out dough to the prepared baking sheet.

  • Brush the dough with olive oil and sprinkle with salt and pepper.

  • Spread the corn mixture over the dough, leaving a small border around the edges.

  • Sprinkle cotija cheese, red onion, and jalapeno slices over the corn mixture.

  • Bake in the preheated oven for 12-15 minutes or until the crust is golden and crispy.

  • Remove from the oven and garnish with fresh cilantro.

  • Slice and serve hot.
