Mexican Street Corn Pizza
Ingredients
pizza dough
1 ball
corn kernels
1 cup
cotija cheese
1/2 cup
mayonnaise
1/4 cup
lime juice
1 tablespoon
chili powder
1 teaspoon
garlic powder
1/2 teaspoon
red onion
1/4 cup, thinly sliced
fresh cilantro
2 tablespoons, chopped
jalapeno
1, sliced
olive oil
1 tablespoon
salt
to taste
pepper
to taste
Steps
Preheat oven to 450°F (230°C) and lightly grease a baking sheet.
In a bowl, combine the corn kernels, mayonnaise, lime juice, chili powder, and garlic powder. Stir until well combined.
Roll out the pizza dough on a floured surface to your desired thickness.
Transfer the rolled out dough to the prepared baking sheet.
Brush the dough with olive oil and sprinkle with salt and pepper.
Spread the corn mixture over the dough, leaving a small border around the edges.
Sprinkle cotija cheese, red onion, and jalapeno slices over the corn mixture.
Bake in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
Remove from the oven and garnish with fresh cilantro.
Slice and serve hot.
