Sunshine Salad
Ingredients
watermelon chunks
2 cups
cucumber
1, sliced
yellow bell pepper
1, diced
cherry tomatoes
1 cup, halved
fresh mint leaves
1/4 cup, chopped
feta cheese
1/2 cup, crumbled
lemon juice
2 tablespoons
extra virgin olive oil
2 tablespoons
salt
to taste
black pepper
to taste
Steps
In a large bowl, combine watermelon chunks, cucumber slices, diced yellow bell pepper, halved cherry tomatoes, and chopped mint leaves.
In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper to make the dressing.
Drizzle the dressing over the salad ingredients and toss gently to combine.
Sprinkle crumbled feta cheese on top and serve chilled.
