Sunshine Salad

Ingredients


  • watermelon chunks

    2 cups

  • cucumber

    1, sliced

  • yellow bell pepper

    1, diced

  • cherry tomatoes

    1 cup, halved

  • fresh mint leaves

    1/4 cup, chopped

  • feta cheese

    1/2 cup, crumbled

  • lemon juice

    2 tablespoons

  • extra virgin olive oil

    2 tablespoons

  • salt

    to taste

  • black pepper

    to taste




Steps


  • In a large bowl, combine watermelon chunks, cucumber slices, diced yellow bell pepper, halved cherry tomatoes, and chopped mint leaves.

  • In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper to make the dressing.

  • Drizzle the dressing over the salad ingredients and toss gently to combine.

  • Sprinkle crumbled feta cheese on top and serve chilled.
