Summer Sunset Pasta

Ingredients


  • spaghetti

    200g

  • cherry tomatoes

    1 cup

  • yellow bell pepper

    1

  • fresh basil leaves

    1/2 cup

  • lemon zest

    1 teaspoon

  • garlic cloves

  • olive oil

    2 tablespoons

  • crumbled feta cheese

    1/2 cup

  • salt

    to taste

  • black pepper

    to taste




Steps


  • Cook spaghetti according to package instructions until al dente.

  • In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for a minute until fragrant.

  • Add halved cherry tomatoes, sliced yellow bell pepper, and lemon zest to the pan. Cook for 3-4 minutes until the tomatoes start to soften.

  • Add cooked spaghetti to the pan and toss well to coat with the vegetables and olive oil.

  • Season with salt and black pepper to taste. Cook for an additional 2-3 minutes.

  • Remove from heat and garnish with fresh basil leaves and crumbled feta cheese.

  • Serve the Summer Sunset Pasta warm and enjoy!
