Mango Coconut Shrimp Skewers

Steps


  • Peel and devein the shrimp.

  • Cut the mango, red bell pepper, and red onion into bite-sized pieces.

  • In a bowl, whisk together coconut milk, lime juice, minced garlic, chopped cilantro, salt, and black pepper.

  • Add the shrimp, mango, red bell pepper, and red onion to the marinade. Let it marinate in the refrigerator for 30 minutes.

  • Preheat the grill to medium-high heat.

  • Thread the marinated shrimp, mango, red bell pepper, and red onion onto the wooden skewers.

  • Grill the skewers for about 3-4 minutes per side, or until the shrimp is cooked through and the vegetables are slightly charred.

  • Serve the mango coconut shrimp skewers hot and enjoy!
