Mango Coconut Shrimp Skewers

Steps
Peel and devein the shrimp.
Cut the mango, red bell pepper, and red onion into bite-sized pieces.
In a bowl, whisk together coconut milk, lime juice, minced garlic, chopped cilantro, salt, and black pepper.
Add the shrimp, mango, red bell pepper, and red onion to the marinade. Let it marinate in the refrigerator for 30 minutes.
Preheat the grill to medium-high heat.
Thread the marinated shrimp, mango, red bell pepper, and red onion onto the wooden skewers.
Grill the skewers for about 3-4 minutes per side, or until the shrimp is cooked through and the vegetables are slightly charred.
